Made with a native and recovered variety from Baix Penedés. We start from our own harvest and hand-made where a very demanding selection of the grapes is made to give the highest possible quality. We carry out an 11-day fermentation maceration at a controlled temperature in a tank, where the free-run must will ferment with the vineyard’s own indigenous yeasts. The acetification process is carried out in ceramic amphorae located in a hut in the middle of the sumoll vineyard, where it will spend months for its natural process to take place. Light pink appearance. The nose highlights notes of wild and ripe red fruits. At the same time we find saline and fresh notes typical of its aging and acetification in the ceramic amphora. In the mouth, very subtle, light and with a pleasant final acidity that harmonizes with any pairing. Very versatile product that combines sweetness, mild acetic acidity and freshness capable of perfuming dishes and enhancing preparations.
